What inspired you to start your business?

My passion and knowledge of Wild Game & outdoor cooking was something that I wanted to bring to folks who were wanting to learn or shared this passion. After working in kitchens since the age of 16, I felt it was time to find independence as a worker and start my own business. I knew there was a need to help folks cook wild game, and I felt that creating spices, rubs, and other blends was the easiest way to help bring confidence and joy to the kitchen.

How do you describe your business?

I would describe my business as unique, accessible, ecological and heart-felt. A huge component to starting The Hunting Season Spice Company revolved around the professional aspect of exploring a market not yet tapped. I felt that as a Red Seal Chef with over a decade of professional culinary experience, it was time for me to share the knowledge I had worked so hard to gain. Through blood, sweat, and tears (literally), I felt that I was at a place in my culinary career that I felt confident in my ability to teach and share what I had learned. Exploring the wild game component felt especially unique, as this was an idea crafted from a life-time of experience I had in the bush, and so long in the kitchen… At the time, this was not something many folks were bringing to the table, and I’ve always loved to explore the unknown.

I pride myself deeply in my ability to ensure that my products are accessible, as I firmly believe that everyone should have access to healthy and delicious food without sacrificing well-being. Nourishment shouldn’t be a sacrifice between one necessity of survival and another, so making these blends accessible was my number one goal. This meant consistently flavorful and reliable usage of my products, affordability, packaging that was easy to stick in your pocket or bush-pack, and making sure that each blend can be used straight from the package without any need for additions.

I want my products to speak for themselves and bring joy to those who use them. This means ease of access in every way possible.

As I walk through life, I try my best to do so in a way that each step is in harmony with nature, those around me, and life-giving to my spirit. This is why when I am cooking, I consider the life that was given to bring me this meal. From meat, vegetables, and everything in between, life is sacrificed for us to consume. I firmly believe that we must be thankful and considerate of that life, and a huge component to that is being able to enjoy what that life gave. That’s why I have made spices for a protein type that is not so mainstream, without heavy industrialization or educational material around it in everyday cookbooks. I want to bring tools to the bush, shore, and kitchen that allow people to cook with confidence, and thoroughly enjoy the fruits of the earth in a way that brings thankfulness and happiness.

When I speak of heart-felt aspects of my business, I directly mean my love for cooking and where it has brought me during my life. Food is life, and I want to share that with everyone. I became a Chef so that I could nourish minds and bellies through delicious food, and this business is an extension of this. I do not want to just sell a product, make money, and thrive as an individual. That is not the purpose of my business… The bottom line isn’t the dollar, it is a healthy, harmonious and fruitful life together with all.

Our Buckshot Steak Spice is BY FAR the best selling product.

Why do you think it’s so popular?

I made this product specifically for those who didn’t like deer/moose/elk, didn’t know how to cook it, or were unsure about eating it. I specifically crafted this blend with food science and statistical knowledge of protein cooking methods for best results possible. We have a very special blend of acid, sugar, salt, and other ingredients that trick the brain into not tasting the “Game-y” flavor that turns people off of Game, and instead brings out the natural aromatics that wild game has to offer.. This blend is MADE for the skeptic, because I want to show everyone how delicious wild game truly can be… with the right tools!

So far, this blend has converted over 20 people who “Hated” wild game, to true believers!

What’s your personal favourite product from your shop right now?

My personal favorite is always changing, as all of my products are so diverse in make-up and application… but… right now, my favorite is Birdshot Wild Bird Seasoning. I love it for it’s diversity in application, flavor, and aromatics. It is an intensely aromatic and floral blend with the capacity to make many meats shine, like Lamb, Pork, Chicken and Fish, but it works for so much more. It is my secret pickled egg/carrot/anything pickled brine ingredient, it works AMAZINGLY on bread as a finish for focaccia, or in a compound butter. It makes a fresh and flavourful chip dip with some sour cream and mayo, and it’s honestly just so easy to use. 10/10 WILL use again!

What’s your favourite local British Columbia shop?

My favourite local business is Maca Ranch. They raise and provide exceptionally high quality meat in the most ethical and loving operation I have ever seen.
